Rye malt from the Waldviertel
Based on 100% rye malt, yeast and water, this whisky makes use of the excellent conditions of the Waldviertel – Austria's rye heartland. The Haider family, pioneers of Austrian whisky, carefully select local rye for Dark Rye, which is dark-roasted at a regional malting house to bring out malty caramel notes.
Maturation and aromas
Dark Rye matures for five years in a unique Trockenbeerenauslese cask made from Manhartsberg pedunculate oak, which gives it mild vanilla tones and a rich range of honey and fruit aromas. This special Selection, a single cask bottling, produces a whisky with a long-lasting finish and a complexity that is only achieved through this special maturation in used sweet wine casks.
